Technical Deep Dive: Crafting a Hefeweizen-Style Ale
At Fermented Curiosities, every brew day is an opportunity to refine the science of fermentation. Today, I am walking through the technical parameters of my latest Hefeweizen-style ale, focusing on the extract selection, hop profile, and yeast management required for this classic style.
The Style: BJCP Weissbier (28D)
According to the BJCP style guidelines, a traditional German Weissbier is a pale, refreshing, wheat-based ale characterized by a unique yeast profile that produces banana esters and spicy phenol notes. The appearance should be very cloudy from the yeast in suspension, with a thick, long-lasting head. It typically features a moderate, bready wheat flavor and a creamy mouthfeel, with hop bitterness kept very low to allow the yeast character to remain the focus.
The Foundation: Malt Extract Selection
To build a complex foundation using Briess CBW® (Concentrated Brewers Wort), I am using a blend of 3.3 lbs of each of the following extracts, all of which feature a specific gravity of 1.035 at 1 lb/1 gal:
CBW® Bavarian Wheat: A blend of 65% wheat and 35% base malt with a color of 3 °Lovibond and a fermentability of 75%, providing a neutral, slightly malty base.
CBW® Munich: An amber extract at 8 °Lovibond and 75% fermentability, chosen for its distinct, toasted biscuit notes.
CBW® Pilsen Light: An extra-light extract at 2 °Lovibond and 76% fermentability to ensure a crisp, clean finish.
The Hop Schedule: Centennial
Centennial is an ideal choice for this brew, known as "Super Cascade" for its balanced aromatic profile.
Technical Profile: Typically contains 10.20% Alpha Acid, 4.00% Beta Acid, and a high total oil content of 2.4 ml/100g.
Oil Impacts: The oil profile is dominated by Myrcene (65.37%), which contributes vibrant citrus, lemon, and pine notes, and Humulene (10.68%), which adds earthy, herbal, and spicy characteristics to the beer.
Additions: I am utilizing 1/4 oz at 60 minutes for clean bittering, followed by another 1/4 oz at 10 minutes to contribute those floral and citrus aromatics.
Precision Quality Control
In professional production, consistency is the goal. Once the wort cools, I will measure the gravity and adjust the pH to a target of 4.4. This critical step helps protect the beer from potential spoilage during the initial phases of fermentation.
Yeast Management: SafAle™ WB-06
I am pitching SafAle™ WB-06, a Saccharomyces cerevisiae var. diastaticus strain specifically tailored for wheat styles.
Performance Specs: This yeast has an alcohol tolerance of 10.5% and a high attenuation rate of 86%.
Characteristics: It features low flocculation, allowing the yeast to stay in suspension for the desired wheat beer haze.
Fermentation Dynamics: The operational temperature range is 12–25°C (53.6–77°F). I will be fermenting at room temperature (approx. 20–22°C / 68–71°F) to achieve a balance of esters and phenols. Within this range, lower temperatures (18–22°C / 64.4–71.6°F) favor the production of fruity esters, while higher temperatures (22–26°C / 71.6–78.8°F) shift the profile toward spicy, clove-like phenolic characteristics.
Best Practices: As a diastaticus strain, it is highly efficient; ensuring thorough cleaning of all equipment is essential to prevent cross-contamination.
Food Pairings
Soft Pretzels: No discussion of German cuisine is complete without mentioning the beloved soft pretzel. The chewy texture and slightly salty exterior of a freshly baked pretzel complement the lightness and effervescence of hefeweizen. The beer’s fruity undertones can counterbalance the saltiness of the pretzel, making each bite a delightful experience. For an added twist, consider pairing your pretzel with a tangy mustard or a smooth cheese dip to enhance the flavor profiles even further.
Bratwurst: This iconic sausage is rich and savory, offering a satisfying contrast to the refreshing nature of hefeweizen.
