Ingredients You Will Need
To create this scrumptious blueberry pancakes mead, gather the following ingredients:
10 lbs Maple Syrup
3 lbs Honey
5 lbs of Blueberry Wine base Concentrate (or 5 lbs of muddled fresh blueberries or blueberry puree)
Top off with water to get desired volume and ABV. I usually do around 5 gallons and get around 15% abv.
2 packets of QA23 yeast
(Optional) 1 tablespoon vanilla
Step-by-Step Instructions
Now that you have your ingredients ready, let’s get started with the preparation!
Prepare Your Ingredients: Rinse the blueberries thoroughly under cold water. This will help to remove any dirt or residues.
Combine Honey and Maple Syrup: In a large pot, add the honey and maple syrup along with about half a gallon of water.
Add Blueberries: Once your honey and syrup mixture is ready, add the fresh blueberries to the pot. Let them simmer for about 15 minutes to infuse the flavors.
Add Yeast: Add yeast nutrient before pitching yeast. Add your QA23 yeast. Rehydrate with GoFerm.
Fermentation: Pour the mixture into a sanitized fermentation vessel and seal it with an airlock. Rack after one week, then second racking when the bubbling decreases significantly.
Potassium Metabisulfite: Add potassium metabisulfite to stop and prevent fermentation.
Degassing: Stir multiple times to degas your mead.
Clarifiers: Add Bentonite and sparkolloid. Wait one week and then rack. Wait another week and do final racking.
Stabilize: Further protection from refermenting and increase shelf-life.
Bottling: Once fermentation is complete, you can bottle the mead. Make sure the bottles are clean and sanitized before transferring the mead. Seal them tightly.
Age and Enjoy: Store your bottles in a cool, dark place. Ideally, let your blueberry pancakes mead age for at least 3 months for the best flavor profile.
