Gathering Your Ingredients
Brewing your own American stout at home can be an exciting adventure. To start your brewing journey, you'll need to gather some essential ingredients. For our American stout recipe, you'll need:
10 lbs of Pale Malt
1 lb of Crystal Malt (60L)
12 oz of Victory Malt
0.5 lb of Roasted Barley
1 oz of Cascade hops 60 Min
1 oz of Centennial hops 60 Min
1 packet of yeast (American Ale yeast is recommended)
Priming sugar for bottling
Yeast nutrients
Mashing and Boiling
Once you have your ingredients ready, it's time to start the brewing process. Begin by heating around 3 gallons of water to approximately 165°F (73°C). Once heated, you will add your crushed grains to the water; this process is called mashing. Make sure to maintain a steady temperature of around 150°F (65°C) for about 60 minutes to extract the sugars from the grains.
After mashing, it's time to sparge the grains and collect the wort (the liquid extracted from the mash). Bring the wort to a boil, and once boiling, add your hop additions. Typically, you start with the bittering hops, in our case, the 1 oz of Cascade hops. After 30 minutes, add your second hop addition, the 1 oz of Centennial hops, along with your Whirlfloc tablet if you're using one. Boil the mixture for a total of 60 minutes.
Cooling and Aerating the Wort
After the boil, the next step is cooling the wort down as quickly as possible to around 70°F (21°C). You can do this using a wort chiller or by placing the brew kettle in an ice bath. Once cooled, transfer the wort into a sanitized fermentation vessel. It’s essential to aerate the wort well by shaking or swirling the vessel. This helps the yeast to multiply properly during fermentation.
Before you pitch your yeast, don’t forget to add your yeast nutrients to provide the best environment for your yeast to thrive. Finally, sprinkle your yeast on top of the wort once it’s cooled and aerated.
Now, seal your fermentation vessel with an airlock and let it ferment for about one to two weeks, depending on the activity.
Racking and Bottling
Once fermentation is complete, you’ll want to rack the beer into another sanitized vessel to separate the beer from the sediment. Finally, it's time for bottling! From here, dissolve priming sugar into warm water and mix it into your beer to carbonate it. Bottle your stout, cap them, and let them carbonate for an additional week or two.
Once the waiting is done, your American stout is ready to be enjoyed. Pour yourself a glass, kick back, and savor the depth of flavors you've created. Happy brewing!
