Start Your Sourdough Journey with a Starter
If you've ever dreamed of baking fresh sourdough bread at home, you're in the right place! The first thing you'll need is a sourdough starter. Think of it as the yeast that brings your bread to life. To make your own starter, combine equal parts of all-purpose flour and water (about 1 cup of each) in a glass jar. Stir it up, cover it loosely, and let it sit at room temperature for about 24 hours. After that time, you should start to see some bubbles. If not, give it a little more time.
Feeding Your Starter
Your starter needs to be nourished to thrive. Every day, discard half of it and feed it again with equal amounts of flour and water. In about 5 to 7 days, you should have a bubbly, fragrant starter ready for baking. This is the magic potion that gives sourdough its distinctive flavor.
Preparing the Dough
Once your starter is lively and bubbly, it’s time to make the dough. In a large bowl, combine 500 grams of bread flour with 350 grams of water. Add in 100 grams of your active sourdough starter. Mix until combined, then let it rest for 30 minutes—this is called autolyse and helps develop the dough’s structure. After resting, add teaspoons of salt, and incorporate it into the dough by pinching and folding.
Now comes the fun part—bulk fermentation! Cover the bowl with a damp cloth and let the dough rise for about 4 hours, giving it a stretch and fold every hour. By the end of this time, your dough should have doubled in size and be full of air bubbles.
Shaping and Baking Your Bread
After bulk fermentation, gently turn your dough out onto a floured work surface. Shape it into a round loaf by folding the edges into the center and then flipping it over. Next, let it rest for 20 minutes before doing a final shaping. Place it seam-side up in a well-floured proofing basket. Now, cover it and let it proof for about another 2-3 hours at room temperature, or overnight in the fridge for a slower fermentation which enhances the flavor.
When ready to bake, preheat your oven to 450°F (232°C) with a Dutch oven inside. Once hot, carefully transfer your dough into the Dutch oven. Cover it and bake for 30 minutes, then remove the lid and bake for an additional 15 minutes until golden brown. As you wait, the aroma of fresh sourdough will fill your kitchen!
Once baked, let your sourdough cool on a wire rack before slicing. It’s barely manageable to resist the fresh bread smell! Enjoy your homemade creation with butter, jam, or simply on its own.
